Homemade Garam Masala | گرم مصالحہ

In this video I will show you how to make Aromatic Garam Masala using simple ingredients usually present in every home.

DISCLAIMER: This recipe requires enough expertise to maintain very low (warm) temperature of pan to bring out essential oils and still be safe to human touch. Very low heat is required to achieve this, and the heat MUST be turned off immediately. Pan must not be heated any more than that and heat must be turned off to ensure safety. This can only be performed by trained individuals who know what they are doing. Ingredients:
1/2 cup Cumin seeds ( Zeera )
2 Tbsp Black Pepper ( Kali Mirch )
1 Tsp or 24-25 Cloves ( Long )
6 to 7, 2 inch Pieces Cinnamon ( Dar chini )
7 to 8 Black Cardamom seeds ( Bari Ilaichi )
1/4 Tsp Carom seeds ( Ajwain )
1/4 Tsp Mace (Javitry )
1/4 piece from Whole Nutmeg (Jaifal )
2 medium size Bay Leaves ( Tez pattay)

Yummy Dahi Bara Masala / دہی بڑا مصالحہ

In this video I will show you how to make yummy Dahi Bara Masala using simple ingredients usually present in every home.

Ingredients:
10 Whole Red Peppers
1 tbsp. Coriander
1/4 tsp. Carom seeds
1/2 tsp. Whole Black Pepper
1 tbsp. Cumin
1 tbsp. Coriander
1/2 tsp. Dried Ginger Powder
1/2 tsp. Salt
1/2 tsp. Citric Acid

Preparation:
1) Dry roast the red peppers on a low flame. When the color changes and you start to smell it, remove the pan from the stove so we don't burn the peppers.
2) Dry roast the whole spices on a low flame. Try to avoid burning them. Once the color starts to change and a little bit of smoke starts to appear, remove the whole spices from the pan and set them aside to cool.
3) After cooling everything, put the peppers inside of the coffee grinder one by one.
4) Once the peppers have finished grinding, add the whole spices. You can grind them to your liking. Make sure you stop in between and mix everything together with a spoon for even grinding.
5) When the whole spices finish grinding, add the salt, citric acid, and dry ginger powder. Start the grinding process again.
6) Cool the masala and then store it in an airtight container.

Yummy Chaat Masala / چاٹ مصالحہ

I n this video I will show you how to make yummy Chaat Masala using simple ingredients usually present in every home.

Ingredients:
12 Whole Red Peppers
1 tbsp. Coriander
1 1/2 tbsp. Cumin
1 tsp. Carom seeds
2 in. Cinnamon stick
1 tsp. Whole Black Pepper
4 Cloves
1 in. piece of Dried Ginger
3 tsp. Mango Powder
1/2 tsp. Citric acid
1/2 tsp. Salt
1 1/2 tsp. Black Salt

Preparation:
1) Dry roast whole spices. This will release essential oils which will bring out the unique flavor of the masala.
2) If smoke starts to appear, turn off the the stove. Set the spices off to cool.
3) The dried ginger will not grind in the coffee grinder, so we must grind it in a mortar and pestle.
4) Grind the whole spices first. Stop in between to check and mix with a spoon to check if the whole spices have finished grinding. Stop halfway through and add the powdered spices and grind everything again.
5) Store it in a tight jar for up to a month.
